CHOCOLATE BEIGNETS

INGREDIENTS:
3/4 cup – lukewarm water
1 1/4 tsp. – active dry yeast
1/4 cup – granulated sugar
1 – egg
1/2 tsp. – salt
1/2 cup – milk
2 tbsp. – butter, melted
3 1/2 cups – bread flour
oil for frying

For the filling:
1/2 cup each – white chocolate and dark chocolate
1/2 cup – heavy cream, divided
2 tbsp. – butter
Chocolate shavings for garnish
PREPARATION:
1. Combine water and sugar in a small bowl. Add the yeast and cover it. Let it sit until slightly frothy around 10 – 15 minutes.
2. In a medium sized bowl, beat the egg. Add in the salt, milk and butter and continue whisking. Now mix in the yeast mixture.
3. Gently fold in the flour in two batches. Transfer this onto a floured surface and knead until it forms a ball. Add more flour if necessary.
4. Place the dough in a greased bowl and brush the surface of the dough with oil. Cover with cling film and let it prove for 2-3 hours or until it has doubled or maybe tripled in size.
5. Roll the dough to 1/2 inch thick and cut into 1-2 inch round or squares. You can use a cookie cutter to do this.
Fry these beignets in hot oil and place on a paper-towel.
6. For the filling melt both chocolates with 1/4 cup heavy cream and 1 tablespoon of butter in each bowl. Fill the ganache in a piping bag with a 1/4 inch nozzle attached. Make a hole on one side of the beignet, insert the nozzle in the hole and press gently. Don’t over fill it. Dip each beignets in remaining ganache and garnish with chocolate shavings.
7. You can also fill the beignets with nutella or custard and dust with powdered sugar and serve immediately. Enjoy with your loved ones.
